Carrot pudding is also known as a gajar ka halwa or carrot halwa, is the sweetest dessert pudding originating from the Indian subcontinent, associated mainly with the north India and Pakistan. It is made by placing the grated carrots in a pot containing an amount of water, milk, and sugar and then cooking while stirring regularly. It is often served with a garnish of almonds and pistachios, and in the end, we can add khoya for more flavor.

People in South Asian countries especially in Pakistan and India, often use this dessert after the meal. And it is also served in the evening with tea and coffee.

Ingredients for carrot pudding

  1. 1kg grated carrots 
  2. half liter milk
  3. 8 tablespoons regular sugar or organic unrefined cane sugar ( add according to your taste)
  4. Chopped almonds ( according to your choice)
  5. 8 to 10 chopped cashews (Kaju)
  6. 7 to 8 pistachios-sliced or chopped 
  7. pinch of saffron (Kesar) – optional
  8. 3 to 4 tablespoon oil

Directions

  1. wash, peel and grated the carrots
  2. mix the dairy milk with the grated carrots in a pan
  3. keep on fire and allow the mixture to simmer
  4. after 15 to 20 minutes add cardamom powder
  5. when the mixture has started thickening, add sugar and oil or ghee
  6. when the mixture has almost dried, add dry fruit in carrot pudding
  7. after adding dry fruit cook this mixture for 5 minutes
  8. Now after this, you can serve this sweet carrot pudding 2 to 3 persons
