Mexican Chicken Chilli Recipe and it’s Nutritional Facts

Traditionally, Mexican food is a combination of fresh vegetables, fruits, meat and seafood so it is full of flavours along with being healthy. Here we are going to teach you “Mexican chicken chilli” which takes about 50 to 60 minutes to cook.

Ingredients

  1. 2 onions
  2. 4 cloves of garlic
  3. ½ a bunch of fresh coriander
  4. 2 free-range chicken breasts
  5. 1 tablespoon olive oil
  6. 1 teaspoon ground cumin
  7. ½ teaspoon ground coriander
  8. 1 whole dried chipotle chilli
  9. 1 pinch of dried chilli flakes
  10. 2 x 400 g tins of chopped tomatoes
  11. 1 x 410g tin of black beans
  12. 4-6 flour tortillas
  13. 2 gem lettuces
  14. 0% fat Greek–style yoghurt
  15. 1 lime
  16. 1 red pepper
  17. 1 red chilli
  18. 4 ripe tomatoes
  19. 3-4 spring onions
  20. ½ a bunch of fresh coriander
  21. 1 lime

Directions

  1. Peel and chop onions, garlic, coriander and slice the chicken into 1cm strips.
  2. Heat oil in a pan and saute onions, garlic, coriander, spices and whole flaked chilli for 5 minutes until the onions are soft but not coloured.
  3. Add chicken and cook for few minutes, then add tomatoes (tinned). Bring to boil, then reduce the heat and simmer (partly covered) for 35 to 40 minutes ( or till chicken breaks), add a little water if it feels dry.
  4. To make salsa, blister pepper and chilli skin by placing under a hot grill or holding with tongs over the flame and once blackened, place in a bowl, cover with clingfilm and set aside to cool.
  5. Chop the tomatoes, put them in a colander with a pinch of sea salt and place it under slow running water for 15 minutes to let the salt draw out some tomatoes’ water.
  6. Peel the skins of pepper and chilli and discard along with the seeds, place them on a board with spring onions and chop.
  7. Add tomatoes and pick coriander leaves and continue chopping until you have a fine salsa.transfer it to a bowl, season with black pepper and lime juice.  
  8. Shred chicken using forks, drain and stir black beans into chilli and continue heating until the are heated through, then remove from heat and stir in coriander leaves
  9. Chop lettuce, then serve the chilli in tortillas with lettuce, a good spoonful of salsa and yoghurt and lime wedges on sides
