Afghani cuisine adds a lot of fatty ingredients in their dishes to withstand the harsh climate and cold weather. It does not involve a lot of spices but it does use common flavours like chillies, saffron,garam masala and pepper.

Ingredients

  • ½ kg lamb
  • 3-4 tablespoon of oil
  • 2 glasses of rice
  • Few almonds
  • ½ cup golden sultanas
  • 2-3 carrots (finely chopped)
  • One large onion ( finely chopped)
  • 2 tablespoon of sugar
  • 1 tablespoon of garam masala
  • 1 tablespoon of coriander powder
  • ½ -1 tablespoon of salt

Directions for recipe

  1. Take a pan, add 2-3 tablespoon of oil in it and turn on medium heat
  2. Once the oil is heated up, add onions. Stir the onions until they get golden brown
  3. Add the meat inside the pan and let it cook for 2-3 minutes on medium heat
  4. Once the meat is cooked, add all the spices inside and give it a good mix
  5. Now add 3 glasses of water, cover the pan and leave it on high heat for 25-30 minutes until the meat gets really soft
  6. Once the meat is cooked, take it out in a separate bowl and add the sauce to a separate bowl as well
  7. Take a pan and add 5-6 glasses of water and once it’s warm enough, add some salt inside along with all the rice
  8. Let the rice cook for 10-12 minutes until it’s medium soft
  9. Get a frying pan and add 2-3 tablespoons of oil
  10. Add carrots and sugar and give them a good mix
  11. Add the sultanas and let it cook for 5-10 minutes on medium heat
  12. When the sultanas and carrots are soft put them into a foil paper
  13. Take the boiled rice in a pan, add all the sauce over it and mix it gently
  14. Place the meat and the foil containing carrots and sultanas on top of the rice.
  15. Cover the rice with a foil and bake them for at least 30 minutes on low heat
  16. Take them out and serve them on a dish
